Exciting bar, restaurant and entertainment concept with an opening for an experienced Executive Chef.
3+ years experience as Executive Chef, or culinary management
Experience in a high volume kitchen
Experience managing a scratch kitchen
Experience overseeing 50+ employees
Passion for the integrity of product, from production process to final execution
Ability to manage controllable line items, analyze and provide input on cost saving measures, proper execution, and efficient output
Assist Culinary Director in planning and production of all menu items for all facets of the operation
Schedules and coordinates the work of chefs, cooks and other kitchen employees to assure that food preparations are economical and technically correct and within budgeted labor cost goals.
Provides accurate weekly reporting, and coordinates all operational tasks required to provide accurate reporting statistics.
Approves the requisition of products and other necessary food supplies
Ensures that high standards of sanitation, cleanliness and safety are maintained throughout all kitchen areas
Establishes controls to minimize food and supply waste
Safeguards all food preparation employees by implementing training to increase their knowledge about safety, sanitation and accident prevention principles
Ensures standard recipes and techniques for food preparation and presentation are followed to corporate set specifications
Attends food and beverage staff and management meetings
Oversees execution and food planning for all private events
Cooks or directly supervises the cooking of items that require skillful preparation
Evaluates food products to assure that quality standards are consistently attained
Interacts with food and beverage management to assure that food production consistently exceeds the expectations of members and guests
Enforces policies and procedures to enhance and measure quality
Provides training and professional development opportunities for all kitchen staff
Support safe work habits and a safe working environment at all times
